Ingredients: 4 lbs pork shoulder, 2 inch chunks; 2 tbsp olive oil; 1 tbsp salt; 1/2 tbsp black pepper; 2 tsp cumin; 2 tsp oregano; 2 tsp garlic powder; 2 tsp onion powder; 2 lbs pork lard; 1 bottle Mexican Coke; 1 medium onion, chunks; 5 garlic cloves; 2 bay leaves; 1 orange, juice and peel; Season pork with oil and seasonings. Melt half of the lard and fry pork chunks until golden brown. Melt other half of the lard & place all pork in pressure cooker along with all the other ingredients. Pressure cook for 35 minutes or slow cook for 4-6 hours. Remove pork and shred on baking sheet. Broil with some of the juices on high until crispy.; 1 1/2 lbs of tomatillos; 1 jalapeño; 1/2 medium white onion; 2 garlic cloves; Juice of 1 lime; 1 tsp salt; 1/2 tsp black pepper; 1/4 cup cilantro; Sauté tomatillo, jalapeño, onion & garlic until slightly brown/charred. Blend with seasonings, lime and cilantro until desired consistency.; Serve tacos on warm corn tortillas, carnitas, salsa verde & fresh onion & cilantro.
